The short pasta shapes of the traditional Donna itriya line are versatile and have a resilient texture. Laid on wooden frames, they undergo a meticulous and lengthy drying process at low temperatures. The natural roughness is achieved through the use of the finest bronze dies, while the hint of straw-yellow color is the result of blending our carefully selected semolina, with a coarse particle size and an unmistakable aroma. Selected semolina, derived from the milling of Sicilian hard grains.
